Ethan grew up in Seattle and is self-taught. He was named one of Food & Wine's Best New Chefs in America in 2008 and has been nominated for more James Beard Awards than he cares to remember. He opened Union in 2003 and hasn't looked back.

Canlis. Jason is a great cook.
Pho Cyclo. I love having a fast and peaceful lunch alone. I probably go twice a week.
Shiro's. My personal opinion is that Shiro is the best chef in Seattle.
Café Lago. My wife and I love going because we can sneak away for a quiet dinner. And the food is great.
Café Campagne. Cassoulet cassoulet cassoulet!
Monsoon. A great Sunday brunch is dim sum, a bottle of Grüner and then a nap.
Keep it simple and know that we are all working to make our guests happy.
Restaurant Pet Peeve
No reservation restaurants. We're all in the hospitality industry and not taking reservations is not very hospitable.
What do you love about Seattle?
Seattle's my home town, I've lived here for 35 years. It's been awesome to watch the city grow and evolve. We truly have grown into being a world class city.

Memorable Kitchen Disaster
Nothing big but I do remember in my early years watching a Baked Alaska explode. Nobody was injured but one guy passed out.
