Marshall has been in charge of pasta production for all ESR locations for several years now. He has worked with extruders and sheeters and before working with ESR, held the role of Sous Chef at Tavolàta's old neighbor Marjorie in Belltown where he often fed the crew after their shifts. He is now managing the commissary kitchen full time.

Best Meal Ever

I once sat squarely on an entire, steaming hot, large Hawaiian pizza that had been placed in my seat for a moment as the young, new server handled another pie. Retuning to my seat from the WC, my chair still tucked in under the table, I slid it out and sat in one motion, never seeing the plate of lava on my chair, sprang up as the red sauce blistered my thumb with cheese trailing ten inches from the pie to my jeans and calmly turned to the table that had shouted NO a bit too late and said “I’m sorry, but your other pizza will be another 10 minutes”.

After Work Hangout

Restaurant Pet Peeve

On the job, salt boxes, with the nice little pull-out spout. Everyone around me knows this. Perfectly good spout, and people still rip the top of the box open, for 1/4 C of salt. As soon as I make enough noise about it, the salt boxes arrive with inoperable spouts, and we have to rip the top of the box open! Sigh.

What do you love about Seattle?

Everything I need and want is within a ten-mile urban radius, yet it doesn't seem crowded. Plus when the sun is out, Seattle is one of the most beautiful places on Earth.

Favorite Place In The World

Haven't seen enough yet to say, but Italy is a good start.

Memorable Kitchen Disaster

I can't pick one. 25 years, I've seen a lot of funny, horrible, and expensive mishaps, and some I have scars from.

Can't Live Without

Besides the elements we call Air, Water, and Food? Easy. Music, and money, in that order.
