Travis headed straight to the C.I.A. out of high school. A few degrees of mutual friends led him to talk with Ethan when he was on a relocation scouting trip before moving on from a 10 year stint in Brooklyn. After a half-year as a Sous-chef at Staple and Fancy, Travis moved up the street to head Bramling Cross.

Waiting too long for an offer for another drink. Don't make it harder for me to give you more money!

What do you love about Seattle?

The ability to drive 45 minutes in any direction and be somewhere new and amazing, and maybe even being able to harvest something delicious while you're there.

Favorite Place In The World

Draw an oval around Hanoi, Luang Prabang and Chengdu—somewhere in there. If we could get that Star Trek translation technology, that would be great, too.

Memorable Kitchen Disaster

Sometimes you forget to turn the oven down and cook a pig head at 500 degrees for 12 hours.
