With a decade+ of experience in the service industry. Tania grew up working in her parents restaurant in New London, NH and grew to love hospitality and all things restaurants. She managed fine dining in Boston, but took a step back to learn how to bartend. After bartending at Viale in Cambridge, MA for awhile, she moved to Seattle and became the bar wizard of Bramling Cross.  Not long after, Tania opened Super Bueno as the Bar Manager and Beverage Director, has served as the Manager at Tavolàta Capitol Hill, and is now the General Manager and Beverage Director at Tavolàta Spokane.

BEST MEAL EVER

Stages at One Washington in Dover, NH. It's an incredible maybe 20 seat restaurant in the middle of nowhere in a tiny corner of a giant abandoned warehouse. The tasting menu was phenomenal and the corned beef heart was one of the best things I've ever eaten in my life. Also anything cooked by my Grammy is a winner.

Pepperoni, no cheese. Extra 'roni. Or Popcorn.

FOOD/SERVICE PHILOSOPHY

Try to work a little bit harder and be a little bit better every day. Try to learn something new everyday and try to teach someone something new everyday. I love getting a guest interested in a new bottle of wine, or a spirit they've never tried. Make someones day better than it was when they walked in; make their experience with you the best part of their day.

MEMORABLE KITCHEN DISASTER 

I was fresh out of college and working at a high volume Irish Pub in NH. We used those large trays to carry large amounts of food. I had food for a 10 top piled on one of these disaster traps and a guest came around the corner too fast and startled me, causing me to step too far to one side, which knocked the tray into the the corner of the door. Flash forward to me sitting on the floor in the middle of the dining room with broken plates everywhere and absolutely covered in food. Most horrifying moment of my life.
