The next Sunday Feast is just around the corner on October 8, and the new chef at Tavolàta, Joel DeBilzan, has a hearty fall feast planned. He’ll be putting a whole heritage pig from Scabland Farm to use in dishes like porchetta, ravioli, and crispy pigs ears. It’ll all be on the table along with squash, salads, and creamy polenta. DeBilzan has been working at Ethan Stowell Restaurants for four years and is excited to take the helm in Belltown. A longtime lover of Italian food and cooking, DeBilzan takes the spot left behind by chef Addam Buzzalini, who has become the culinary director for our restaurant group!
